Ingredients
Scale
For the Dish:
- 9 oz cheese tortellini (fresh or frozen)
- 2 tbsp extra virgin olive oil
- 3 cloves garlic (minced)
- 14 oz canned diced tomatoes (with juice)
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper (to taste)
Instructions
- 1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until they float, about 3-5 minutes for fresh tortellini. Drain and set aside.
- 2. Sauté the Garlic: While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Avoid burning.
- 3. Create the Sauce: Add canned diced tomatoes (with juice) to the skillet with garlic. Stir well and simmer for about 5 minutes until slightly thickened.
- 4. Add Spinach: Incorporate fresh spinach into your tomato mixture, stirring until wilted, about 2-3 minutes.
- 5. Combine Everything: Toss the drained tortellini into the skillet with the sauce and gently mix everything together.
- 6. Plate Up!: Serve hot, garnished with grated Parmesan cheese and an extra drizzle of olive oil if desired. Enjoy with crusty bread or a side salad!
