  • 1 cup cheese curds
  • 2 cups chicken gravy
  • 4 large eggs

For the Hollandaise Sauce:

  • 3 large egg yolks
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/2 cup unsalted butter
  • 1 pinch cayenne pepper

Instructions

For the Poutine:

  1. 1. Preheat the oven and bake frozen French fries according to package instructions (typically at 425°F for 20-25 minutes until golden brown).
  2. 2. While fries are baking, heat chicken gravy in a saucepan over medium heat until hot and bubbling.
  3. 3. In a medium saucepan, bring water to a gentle simmer. Crack each egg into individual bowls and gently slide them into the simmering water. Poach for about 3 minutes until whites are set but yolks remain runny.

For the Hollandaise Sauce:

  1. 4. In a mixing bowl, whisk together egg yolks and lemon juice until thickened and pale.
  2. 5. In a small saucepan over low heat, melt butter. Gradually drizzle melted butter into the egg mixture while whisking continuously until smooth and creamy. Add cayenne pepper.
