For the Poutine:
- 1 lb frozen French fries
- 1 cup cheese curds
- 2 cups chicken gravy
- 4 large eggs
For the Hollandaise Sauce:
- 3 large egg yolks
- 2 tbsp lemon juice (freshly squeezed)
- 1/2 cup unsalted butter
- 1 pinch cayenne pepper
Instructions
For the Poutine:
- 1. Preheat the oven and bake frozen French fries according to package instructions (typically at 425°F for 20-25 minutes until golden brown).
- 2. While fries are baking, heat chicken gravy in a saucepan over medium heat until hot and bubbling.
- 3. In a medium saucepan, bring water to a gentle simmer. Crack each egg into individual bowls and gently slide them into the simmering water. Poach for about 3 minutes until whites are set but yolks remain runny.
For the Hollandaise Sauce:
- 4. In a mixing bowl, whisk together egg yolks and lemon juice until thickened and pale.
- 5. In a small saucepan over low heat, melt butter. Gradually drizzle melted butter into the egg mixture while whisking continuously until smooth and creamy. Add cayenne pepper.
- To Assemble:
- 6. Once fries are done, place on plates or shallow bowls. Sprinkle cheese curds on top of hot fries to allow melting.
- 7. Drizzle hot gravy over fries and cheese curds.
- 8. Place one poached egg on each serving and spoon hollandaise sauce on top.
