For the Pasta:
- 2 cups elbow macaroni
For the Cheese Sauce:
- 2 cups sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 2 cups whole milk
- 4 tbsp unsalted butter
- 2 tbsp all-purpose flour
- Salt and pepper to taste
For the Topping:
- 1 cup panko breadcrumbs
Instructions
For the Pasta:
- 1. Bring a large pot of salted water to a rolling boil.
- 2. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
For the Cheese Sauce:
- 1. In a saucepan over medium heat, melt butter.
- 2. Whisk in flour until smooth and bubbly (about 1 minute).
- 3. Gradually pour in milk while stirring continuously until thickened and creamy.
- 4. Remove from heat and stir in cheddar and Monterey Jack cheese until completely melted. Season with salt and pepper.
For Assembly:
- 1. Add cooked macaroni to the cheese sauce, stirring until evenly coated.
- 2. Preheat oven to 350°F (175°C) and pour mac & cheese into a greased baking dish.
- 3. Smooth out the top and sprinkle panko breadcrumbs evenly over it.
- 4. Bake for 25–30 minutes or until bubbly and golden brown.
