  • 8 oz Thai rice noodles
  • 2 cups mixed fresh vegetables (bell peppers, carrots, snap peas)

For the Protein:

  • 1 cup chicken breast (sliced) or tofu (cubed)

For the Sauce:

  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp freshly squeezed lime juice
  • 2 cloves garlic (minced)

Instructions

For the Noodles:

  1. 1. Soak Thai rice noodles in hot water according to package instructions until soft but slightly chewy, about 10 minutes. Drain and set aside.

For the Protein:

  1. 2. In a large skillet or wok, heat 2 tbsp oil over medium-high heat. Add chicken or tofu and cook until golden brown, approximately 5 minutes. Remove from pan and set aside.

For the Vegetables:

  1. 3. In the same skillet, add minced garlic and mixed vegetables. Stir-fry for about 3 to 4 minutes until tender-crisp.

For the Sauce:

  1. 4. In a small bowl, whisk together soy sauce, fish sauce, and lime juice.
