- 2 cups mixed fresh vegetables (bell peppers, carrots, snap peas)
For the Protein:
- 1 cup chicken breast (sliced) or tofu (cubed)
For the Sauce:
- 3 tbsp low-sodium soy sauce
- 1 tbsp fish sauce
- 1 tbsp freshly squeezed lime juice
- 2 cloves garlic (minced)
Instructions
For the Noodles:
- 1. Soak Thai rice noodles in hot water according to package instructions until soft but slightly chewy, about 10 minutes. Drain and set aside.
For the Protein:
- 2. In a large skillet or wok, heat 2 tbsp oil over medium-high heat. Add chicken or tofu and cook until golden brown, approximately 5 minutes. Remove from pan and set aside.
For the Vegetables:
- 3. In the same skillet, add minced garlic and mixed vegetables. Stir-fry for about 3 to 4 minutes until tender-crisp.
For the Sauce:
- 4. In a small bowl, whisk together soy sauce, fish sauce, and lime juice.
- Combine Everything:
- 5. Add drained noodles back into the skillet with vegetables. Pour sauce over everything and toss to combine; cook for another 2 minutes until heated through.
