  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded sharp cheddar cheese

For the Toppings:

  • 1 cup sour cream
  • ¼ cup chopped green onions

  2. 1. Preheat the Oven: Preheat your oven to 350°F (175°C). Spray a large skillet with nonstick cooking spray.
  3. 2. Cook the Beef: Add the ground beef to the skillet over medium heat. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  4. 3. Add Flavors: Stir in taco seasoning, black beans, diced tomatoes (with juices), and cooked rice. Mix until well combined and let simmer for about five minutes.
