- 1 can (14.5 oz) diced tomatoes

- 1. Preheat the Oven: Preheat your oven to 350°F (175°C). Spray a large skillet with nonstick cooking spray.
- 2. Cook the Beef: Add the ground beef to the skillet over medium heat. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- 3. Add Flavors: Stir in taco seasoning, black beans, diced tomatoes (with juices), and cooked rice. Mix until well combined and let simmer for about five minutes.
- 4. Assemble: Transfer half of the mixture into a greased baking dish. Sprinkle half of the shredded cheddar cheese over it. Add the remaining mixture on top and finish with more cheese.
- 5. Bake: Cover the dish with aluminum foil and bake for about 20 minutes. Remove foil and bake uncovered for another ten minutes until cheese is bubbly and golden brown.
- 6. Serve: Let cool for five minutes before serving. Top with sour cream and chopped green onions.
