Description

This shrimp scampi pasta features succulent shrimp in a rich garlic butter sauce, served over al dente pasta. It’s quick, easy, and perfect for any occasion.

For the Pasta:

  • 8 oz spaghetti or linguine
  • 1 lb fresh shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil

For the Sauce:

  • 2 tbsp lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. 1. Boil Your Pasta
  2. Bring a large pot of salted water to a boil. Add spaghetti or linguine and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water before draining.
  3. 2. Sauté Garlic
  4. In a large skillet over medium heat, melt butter with olive oil. Once bubbly, add minced garlic and sauté for about one minute until fragrant.
  5. 3. Cook the Shrimp
  6. Add the fresh shrimp to the skillet. Cook until they turn pink and opaque, approximately three minutes per side.
  7. 4. Mix in the Sauce
  8. Stir in lemon juice and chopped parsley. If necessary, add reserved pasta water to reach desired consistency.
  9. 5. Combine Everything
  10. Gently toss the drained pasta with the shrimp mixture until well combined. Season with salt and pepper to taste.
  11. 6. Serve It Up
  12. Transfer to plates or bowls and garnish with additional parsley if desired.
