- 1/2 cup powdered sugar
- 1/4 cup butter, softened
- 1 tsp vanilla extract
Instructions
For the Cookies:
- 1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- 2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- 3. In another bowl, beat together pumpkin puree, sugar, eggs, and vanilla until combined.
- 4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
- 5. Drop tablespoons of dough onto prepared baking sheets about two inches apart.
- 6. Bake for about 15 minutes or until set but still slightly soft in the center. Let cool on wire racks.
For the Cream Cheese Filling:
- 1. In a mixing bowl, whip together cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
- 2. Once cookies are completely cooled, spread or pipe filling onto one cookie and top with another.
