- 3–4 boneless, skinless chicken breasts
- 2 tbsp smoked paprika
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup low-sodium chicken broth
For the Sauce:
- 1 tbsp Dijon mustard
- 1/2 cup sour cream
Instructions
- 1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- 2. Pat the chicken breasts dry and season both sides generously with salt, pepper, and smoked paprika.
- 3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown.
- 4. In a small bowl, mix together minced garlic, Dijon mustard, sour cream, and chicken broth until smooth.
- 5. Transfer the seared chicken to the prepared baking dish and pour the sauce over it.
- 6. Bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- 7. Serve hot with rice or crusty bread, drizzling any remaining sauce over the top.
