- 4 large eggs, room temperature
Instructions
For the Crust:
- 1. Preheat your oven to 350°F (175°C).
- 2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed.
- 3. Press the mixture firmly into the bottom of a springform pan.
- 4. Bake in the preheated oven for 10 minutes. Allow to cool.
For the Filling:
- 1. In a large bowl, beat softened cream cheese with an electric mixer on medium speed until smooth.
- 2. Gradually add granulated sugar while mixing until fully incorporated.
- 3. Mix in sour cream and vanilla extract until smooth and creamy.
- 4. Add eggs one at a time, mixing on low speed after each addition until just combined—do not overmix.
- 5. Pour the filling over the cooled crust in the springform pan.
- 6. Bake for 55-60 minutes or until set but slightly jiggly in the center.
- 7. Let cool at room temperature before refrigerating for at least four hours (overnight is best).
