For the Sauce:
- 3 cloves fresh garlic, minced
- 1 cup sun-dried tomatoes packed in oil, chopped
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh spinach leaves
- 2 tablespoons olive oil
Instructions
- 1. Preheat the Oven
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- 2. Season the Chicken
- Pat the chicken breasts dry with paper towels. Season generously with salt and pepper.
- 3. Sauté Garlic
- In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute.
- 4. Create the Sauce
- Stir in chopped sun-dried tomatoes and heavy cream. Whisk in grated Parmesan until smooth.
- 5. Add Spinach
- Fold in fresh spinach leaves until wilted.
