For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste

For the Sauce:

  • 3 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach leaves
  • 2 tablespoons olive oil

Instructions

  1. 1. Preheat the Oven
  2. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  3. 2. Season the Chicken
  4. Pat the chicken breasts dry with paper towels. Season generously with salt and pepper.
  5. 3. Sauté Garlic
  6. In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute.
  7. 4. Create the Sauce
  8. Stir in chopped sun-dried tomatoes and heavy cream. Whisk in grated Parmesan until smooth.
  9. 5. Add Spinach
  10. Fold in fresh spinach leaves until wilted.
  11. 6. Assemble & Bake
  12. Place seasoned chicken in the baking dish and pour the sauce over it. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).

  14. Plate the chicken and drizzle with additional sauce before serving.
