- 1 lb fresh carrots
- 2 tbsp pure maple syrup
- 2 tbsp olive oil
- 1 tsp fresh thyme (or 1/3 tsp dried thyme)
- Salt & pepper to taste
Instructions
- 1. Preheat your oven to 425°F (220°C).
- 2. Wash and peel the carrots. Cut them into even sticks or rounds.
- 3. In a large bowl, combine carrots with olive oil, maple syrup, salt, pepper, and thyme. Mix until evenly coated.
- 4. Spread the carrot pieces on a parchment-lined baking sheet, ensuring they have space between them.
- 5. Roast in the preheated oven for about 25-30 minutes or until golden brown and fork-tender. Stir halfway through for even roasting.
- 6. Remove from the oven and let cool slightly before serving. Drizzle with any remaining maple syrup from the baking sheet.
