Description

These Maple Roasted Carrots with Thyme are a simple yet flavorful side dish, combining the sweetness of maple syrup and the earthiness of thyme for a perfect pairing.

Ingredients

Scale
  • 1 lb fresh carrots
  • 2 tbsp pure maple syrup
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (or 1/3 tsp dried thyme)
  • Salt & pepper to taste

Instructions

  1. 1. Preheat your oven to 425°F (220°C).
  2. 2. Wash and peel the carrots. Cut them into even sticks or rounds.
  3. 3. In a large bowl, combine carrots with olive oil, maple syrup, salt, pepper, and thyme. Mix until evenly coated.
  4. 4. Spread the carrot pieces on a parchment-lined baking sheet, ensuring they have space between them.
  5. 5. Roast in the preheated oven for about 25-30 minutes or until golden brown and fork-tender. Stir halfway through for even roasting.
  6. 6. Remove from the oven and let cool slightly before serving. Drizzle with any remaining maple syrup from the baking sheet.
