For the Chicken:
- 3–4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
For the Sauce:
- 4 cloves fresh garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
For the Chicken:
- 1. Gather all ingredients. Mince garlic and chop sun-dried tomatoes.
- 2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper.
- 3. Cook each side for about 6-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
For the Sauce:
- 1. In the same skillet, add more olive oil if needed. Add minced garlic and sauté until fragrant (about 1 minute).
- 2. Add chopped sun-dried tomatoes; cook for another minute before pouring in heavy cream.
- 3. Stir in spinach until wilted (about two minutes). Sprinkle grated Parmesan cheese into the sauce while stirring to combine.
- Combine Chicken & Sauce:
- 1. Return seared chicken breasts to the skillet, spooning sauce over each piece.
- 2. Let simmer together for about five minutes.
- Serve It Up:
- 1. Serve creamy Tuscan chicken on plates or directly from the skillet with extra sauce drizzled on top.
