For the Chicken:

  • 34 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Sauce:

  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

For the Chicken:

  1. 1. Gather all ingredients. Mince garlic and chop sun-dried tomatoes.
  2. 2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper.
  3. 3. Cook each side for about 6-7 minutes until golden brown and cooked through. Remove from skillet and set aside.

For the Sauce:

  1. 1. In the same skillet, add more olive oil if needed. Add minced garlic and sauté until fragrant (about 1 minute).
  2. 2. Add chopped sun-dried tomatoes; cook for another minute before pouring in heavy cream.
  3. 3. Stir in spinach until wilted (about two minutes). Sprinkle grated Parmesan cheese into the sauce while stirring to combine.
