Instructions
- Preparing the Cauliflower:
- 1. Remove leaves from the cauliflower and cut it into florets. Rinse under cold water to clean.
- Roasting the Garlic:
- 2. Preheat your oven to 400°F (200°C). Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until soft.
- Steaming the Cauliflower:
- 3. Place cauliflower florets in a steamer basket over boiling water. Cover and steam for about 10-12 minutes or until tender enough to pierce with a fork.
- Blending Ingredients:
- 4. Transfer steamed cauliflower and roasted garlic cloves into a food processor. Add heavy cream, butter, salt, and pepper. Blend until smooth but still fluffy.
- Finishing Touches:
- 5. Stir in freshly chopped chives for added color and flavor. Adjust seasoning if necessary.

- 6. Serve warm on plates or bowls, garnished with an extra drizzle of olive oil or more chopped chives if desired.
