Instructions

For the Cookie Dough:

  1. 1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. 2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. 3. Beat in eggs one at a time, then add vanilla extract.
  4. 4. In another bowl, whisk together flour and baking soda. Gradually mix this into the wet ingredients until just combined.
  5. 5. Gently fold in chocolate chips.

For the Cheesecake Filling:

  1. 1. In a separate bowl, beat room temperature cream cheese until smooth.
  2. 2. Add powdered sugar and vanilla extract; mix until fully incorporated.
  3. Assembling the Cookies:
  4. 1. Scoop out cookie dough onto prepared baking sheets about two inches apart.
  5. 2. Make an indentation in each scoop and fill it with about one tablespoon of cheesecake filling before covering it with more cookie dough.
