- 1 lb lean ground beef

- 1 cup cottage cheese (full-fat or low-fat)
- 3 tbsp hot honey (store-bought or homemade)
Instructions
For the Sweet Potatoes:
- 1. Preheat your oven to 400°F (200°C).
- 2. In a bowl, toss sweet potato cubes with olive oil, salt, pepper, and paprika.
- 3. Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and caramelized.
For the Beef:
- 1. While the sweet potatoes are roasting, heat a skillet over medium heat.
- 2. Add ground beef and season with salt and pepper. Cook for about 7-10 minutes until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- To Assemble:
- 1. In a mixing bowl, scoop out cottage cheese and fluff it gently.
- 2. Once sweet potatoes are done roasting, layer each bowl starting with a generous scoop of cottage cheese.
- 3. Top with roasted sweet potatoes followed by cooked ground beef.
- 4. Drizzle hot honey generously over each bowl.
