- 4 cloves fresh garlic, minced
- 1 cup grated parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
For the Potatoes:
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried Italian herbs (oregano and basil)
For the Sauce:
- 2 tbsp butter
- Salt and pepper to taste
Instructions
For the Chicken:
- 1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
- 2. Pat the chicken breasts dry with paper towels. Season generously with salt and pepper. Drizzle with olive oil and rub in minced garlic.
For the Potatoes:
- 3. Place halved baby potatoes in a bowl. Toss with olive oil, salt, pepper, and Italian herbs until well-coated.
- 4. In the prepared baking dish, arrange seasoned chicken breasts in one layer and scatter potatoes around them.
- 5. Sprinkle grated parmesan cheese evenly over both chicken and potatoes.
- 6. Bake in the preheated oven for about 30-35 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
- 7. Transfer everything onto plates and drizzle melted butter over the top before serving.
