  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs (oregano and basil)

For the Sauce:

  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

For the Chicken:

  1. 1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. 2. Pat the chicken breasts dry with paper towels. Season generously with salt and pepper. Drizzle with olive oil and rub in minced garlic.

For the Potatoes:

  1. 3. Place halved baby potatoes in a bowl. Toss with olive oil, salt, pepper, and Italian herbs until well-coated.
  2. 4. In the prepared baking dish, arrange seasoned chicken breasts in one layer and scatter potatoes around them.
