- 3–4 boneless, skinless chicken breasts
- 4 large yellow onions
- 2 cups low-sodium vegetable broth
- 1 cup Gruyère cheese, shredded
- 4 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- 1. Preheat Your Oven
- Preheat your oven to 375°F (190°C). Prepare a large baking dish by spraying it with nonstick cooking spray.
- 2. Sauté the Onions
- In a large skillet over medium heat, melt butter. Add sliced yellow onions and sauté for about 20-25 minutes, stirring occasionally, until they are golden brown and caramelized.
- 3. Prepare the Chicken
- Season boneless chicken breasts with salt, pepper, and thyme. Arrange them at the bottom of the prepared baking dish.
- 4. Layer It Up
- Mix caramelized onions with vegetable broth in the skillet and simmer for about 5 minutes. Pour the mixture over the chicken breasts and sprinkle Gruyère cheese generously on top.
