Ingredients

  • 2 lbs fresh ripe tomatoes
  • 1 large sweet onion, chopped
  • 4 cloves garlic, whole
  • 1 cup heavy cream
  • 3 cups low-sodium vegetable broth
  • 1 cup fresh basil leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2. Spread fresh tomatoes and chopped onions on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for about 30 minutes until blistered and caramelized.
  3. 3. In the last 10 minutes of roasting, add whole garlic cloves to the baking sheet.
  4. 4. Once roasted, let cool slightly, then transfer vegetables to a blender. Add fresh basil, vegetable broth, and heavy cream. Blend until smooth.
  5. 5. Pour the mixture into a pot over medium heat. Stir occasionally until heated through (about 5 minutes). Adjust seasoning if needed.
  6. 6. Serve in bowls or mugs, garnished with basil leaves or a drizzle of olive oil.
