  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups fresh spinach, chopped

Instructions

  2. In a large pot over medium heat, add 2 tbsp olive oil. Once hot, add diced onions, carrots, and celery. Sauté for about 5 minutes until softened.
