Instructions
For the Crust:
- 1. Preheat your oven to 325°F (160°C). Line an 8×8-inch baking dish with parchment paper.
- 2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of the prepared baking dish.
- 3. Bake for about 10 minutes until lightly golden and fragrant.
For the Filling:
- 1. In a large mixing bowl, beat softened cream cheese and sugar until smooth.
- 2. Gradually add eggs one at a time, mixing well after each addition.
- 3. Mix in eggnog, nutmeg, and cinnamon until fully combined and silky.
- 4. Pour cheesecake filling over the pre-baked crust and spread evenly.
- 5. Bake for 40-45 minutes or until the center is set but slightly jiggly.
- 6. Allow to cool at room temperature before chilling in the refrigerator for at least two hours.
