- 3 cloves fresh garlic, minced
- 2 medium carrots, diced

- 6 cups low-sodium chicken broth
- 1 cup heavy cream or half-and-half
- 1 pound gnocchi (store-bought or homemade)
- 2 cups spinach or kale, chopped
Instructions
- 1. Prepare Ingredients: Dice the onion, carrots, celery, and mince the garlic.
- 2. Cook the Chicken: In a large pot over medium heat, add a splash of olive oil. Season the chicken breasts with salt and pepper and sear until golden brown on both sides (about 5-7 minutes each). Remove from the pot.
- 3. Add Vegetables: In the same pot with drippings, add chopped onion, carrots, celery, and minced garlic. Sauté until soft (about 5 minutes).
- 4. Pour in Broth: Return cooked chicken to the pot along with chicken broth. Bring to a simmer.
- 5. Cook Gnocchi: Add gnocchi to the pot and cook according to package instructions (usually about 3 minutes or until they float).
- 6. Finish It Off: Stir in heavy cream and spinach (or kale) until wilted. Taste and adjust seasoning as needed.
