Ingredients

  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt & pepper to taste

Instructions

  1. 1. Sauté the Aromatics
  2. In a large pot over medium heat, melt the butter. Add the chopped onion and minced garlic. Sauté until soft and fragrant, about 5 minutes.
  3. 2. Add the Broccoli
  4. Stir in the chopped broccoli florets and cook for about 3 minutes until they turn bright green but remain tender-crisp.
  5. 3. Pour in the Broth
  6. Add the vegetable broth to the pot. Bring to a gentle boil, then reduce heat and let it simmer uncovered for about 10 minutes until the broccoli is tender.
