- 1/4 cup balsamic vinegar
Instructions
- 1. Preheat Your Oven: Preheat your oven to 375°F (190°C).
- 2. Prepare Your Chicken: Rinse and pat dry the whole chicken. Place it breast-side up in a roasting pan.
- 3. Make the Glaze: In a mixing bowl, combine fresh cranberries, pure maple syrup, minced garlic, olive oil, balsamic vinegar, and thyme. Stir until well blended.
- 4. Coat the Chicken: Pour half of the cranberry-maple glaze over the chicken. Rub it into every crevice for maximum flavor.
- 5. Roast: Cover the roasting pan with foil and place it in the oven. Roast for about an hour; then remove the foil and baste with remaining glaze every 15 minutes until done (about another hour).
- 6. Serve: Once fully cooked (internal temperature should reach at least 165°F or about 75°C), let it rest for ten minutes before carving and drizzling with sauce.
