For the Chicken:

  • 1 whole chicken (34 pounds)
  • 2 cups fresh cranberries
  • 1/2 cup pure maple syrup

  • 2 tbsp olive oil
  • 2 tsp fresh thyme (or 1 tsp dried thyme)

For the Sauce:

  • 1/4 cup balsamic vinegar

Instructions

  1. 1. Preheat Your Oven: Preheat your oven to 375°F (190°C).
  2. 2. Prepare Your Chicken: Rinse and pat dry the whole chicken. Place it breast-side up in a roasting pan.
