Description
Warm up with this creamy, hearty zuppa toscana featuring tender potatoes, kale, and savory Italian sausage in a rich broth—comfort food at its finest!
Ingredients
Scale
- 1 lb Italian sausage (spicy or mild)
- 4 medium Yukon Gold potatoes, diced
- 2 cups fresh kale, chopped
- 1 medium sweet onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- 1. In a large pot over medium heat, add a splash of olive oil. Once hot, add the Italian sausage and cook until browned (about 5-7 minutes), breaking it into small pieces.
- 2. Add the diced onion and minced garlic to the pot. Sauté until fragrant and translucent (about 3-4 minutes).
- 3. Stir in the diced Yukon Gold potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until the potatoes are fork-tender.
- 4. Mix in the chopped kale and heavy cream. Continue to simmer for an additional few minutes until the kale wilts.
- 5. Season with salt and pepper to taste before serving.
- 6. Enjoy piping hot! Consider garnishing with extra crumbled sausage or fresh parsley if desired.
