Ingredients

  • 4 medium Yukon Gold potatoes, diced
  • 2 cups fresh kale, chopped
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. 1. In a large pot over medium heat, add a splash of olive oil. Once hot, add the Italian sausage and cook until browned (about 5-7 minutes), breaking it into small pieces.
