- 12 ounces fresh green beans
- 3 tbsp olive oil
Instructions
- 1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- 2. Season chicken breasts with garlic powder, thyme, salt, and pepper.
- 3. Halve or quarter the small potatoes and trim the ends off the green beans.
- 4. In a bowl, toss potatoes and green beans with olive oil, salt, and pepper until well coated.
- 5. Place seasoned chicken breasts in the center of the baking dish and surround them with potatoes and green beans.
- 6. Roast everything in the oven for about 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
