For the Filling:
- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 8 oz full-fat cream cheese, softened
- 1/4 cup fresh parsley or chives, chopped
For the Crust:
- 2 sheets puff pastry (thawed)
For the Sauce:
- 1 cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
Instructions
For the Filling:
- 1. In a skillet over medium heat, cook diced chicken breasts until golden brown, about 6-8 minutes.
- 2. Add minced garlic during the last minute to prevent burning.
- 3. Transfer cooked chicken to a bowl and stir in softened cream cheese and chopped herbs until well combined.
For the Crust:
- 1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- 2. Roll out puff pastry sheets and cut them into squares.
- 3. Place a generous spoonful of chicken filling in the center of each square.
- 4. Fold over diagonally and press edges together with a fork to seal.
- 5. Arrange filled pastries on the baking dish and brush tops with an egg wash (1 egg whisked with water).
For the Sauce:
- 1. In a small saucepan over medium heat, combine chicken broth and lemon juice.
- 2. Simmer until slightly thickened.
