- 3–4 boneless, skinless chicken breasts
- 8 oz penne or fettuccine pasta
- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 1 cup heavy cream (or half-and-half)
- 1/2 cup grated fresh Parmesan cheese
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Drain and set aside.
- 2. Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Sear each side for about four minutes until golden brown. Remove from skillet and let rest.
- 3. Add Garlic: In the same skillet, add minced garlic and sauté for about one minute until fragrant.
- 4. Create the Sauce: Pour in heavy cream and sprinkle dried oregano while stirring gently. Simmer until slightly thickened.
- 5. Combine Ingredients: Chop rested chicken into bite-sized pieces and return to the skillet along with drained pasta. Stir until well coated in the sauce.
