- 2 large eggs
- 1 cup Italian-style breadcrumbs

For the Chicken:
- 1. Preheat your oven to 400°F (200°C). Flatten chicken breasts to an even thickness with a meat mallet for even cooking.
- 2. Set up three shallow bowls: one with seasoned flour (salt and pepper), another with whisked eggs, and the last with breadcrumbs mixed with Italian seasoning. Dip each piece of chicken into the flour, then egg, and finally coat it thoroughly in breadcrumbs.
- 3. In a large skillet over medium heat, add enough olive oil to cover the bottom. Once hot, place chicken in the pan. Cook until golden brown on both sides—about 4-5 minutes per side.
