- 1 can (15 oz) black beans, drained and rinsed
For the Toppings:
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 cup shredded cheese (cheddar or Monterey Jack)
Instructions
For the Chicken:
- 1. Marinate chicken breasts in olive oil, chili powder, cumin, salt, and pepper for at least 30 minutes.
For the Base:
- 2. Cook brown rice according to package instructions until fluffy.
- 3. In a skillet over medium-high heat or on a grill, cook marinated chicken for about 6-7 minutes per side until golden brown and internal temperature reaches 165°F.
- 4. Slice the cooked chicken into strips.
For Assembly:
- 5. In a deep bowl, layer cooked brown rice followed by black beans.
- 6. Place sliced chicken over the rice and beans.
