  • Mixed Vegetables (bell peppers, peas, carrots): 2 cups

For the Sauce:

  • Low-Sodium Soy Sauce: 1/4 cup
  • Honey: 2 tbsp

Instructions

  1. Prepare Your Ingredients:
  2. Gather all ingredients and chop the mixed vegetables. Preheat your oven to 375°F (190°C).
  3. Season the Chicken:
  4. Season the chicken breasts with salt, pepper, and any additional spices you prefer.
  5. Sear the Chicken:
  6. Heat 2 tablespoons of oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts until golden brown on both sides (about 5 minutes per side). Remove from skillet.
  7. Stir in Rice & Broth:
  8. In the same skillet, stir in the rice and pour in the chicken broth along with mixed vegetables.
  9. Combine Everything:
  10. Return the seared chicken to the skillet on top of the rice mixture. Drizzle with soy sauce and honey, then cover tightly with foil.
