- 2 cups leftover mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 large egg
- 1/4 cup chopped green onions
- 1/2 cup breadcrumbs (regular or panko)
- Salt and pepper to taste
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. In a large mixing bowl, combine leftover mashed potatoes, shredded cheese, chopped green onions, egg, salt, and pepper. Mix until well combined.
- 3. Scoop out portions of the mixture and shape them into small balls or puffs. Roll each puff in breadcrumbs for added crunch.
- 4. Line a baking sheet with parchment paper and place the puffs on it. Bake for 20-25 minutes or until golden brown.
- 5. Let cool slightly before serving with your choice of dipping sauce.
