  • 1 lb boneless chicken thighs
  • 1 cup shredded mozzarella cheese
  • 1/2 medium red onion, thinly sliced

For Garnish:

  • 1/4 cup fresh cilantro, chopped

Instructions

For the Crust:

  1. 1. Preheat your oven to 475°F (245°C) and place a pizza stone inside if you have one.
  2. 2. Roll out the pizza dough on a floured surface to your desired shape and transfer it to a parchment-lined baking sheet or preheated pizza stone.

For the Filling:

  1. 3. In a skillet over medium heat, add a bit of oil and sear the boneless chicken thighs until browned (about 5 minutes per side).
  2. 4. Once slightly cooled, shred the chicken using two forks and mix it with barbecue sauce in a bowl.
  3. 5. Spread additional barbecue sauce over the prepared crust.
