For the Salad:
- 4 cups kale, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup walnuts or almonds, toasted
- 1/2 cup dried cranberries
- 1/2 cup feta cheese, crumbled
For the Dressing:
- 1/4 cup extra virgin olive oil
- 3 tbsp freshly squeezed lemon juice
- 1 tsp Dijon mustard
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions
For the Salad:
- 1. Wash and dry the kale thoroughly. Remove tough stems and chop leaves into bite-sized pieces.
- 2. In a large bowl, combine chopped kale, cherry tomatoes, cucumber slices, red onion rings, toasted nuts, dried cranberries, and crumbled feta cheese. Toss gently to mix.
For the Dressing:
- 3. In a small jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
- 4. Drizzle dressing over the salad mixture. Massage it gently into the kale leaves for enhanced flavor.
- 5. Allow dressed salad to sit for about ten minutes before serving to let flavors meld.
- 6. Transfer to plates or bowls and enjoy as a nutritious standalone dish or side.
