Ingredients

For the Salad:

  • 4 cups kale, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup walnuts or almonds, toasted
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese, crumbled

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

For the Salad:

  1. 1. Wash and dry the kale thoroughly. Remove tough stems and chop leaves into bite-sized pieces.
  2. 2. In a large bowl, combine chopped kale, cherry tomatoes, cucumber slices, red onion rings, toasted nuts, dried cranberries, and crumbled feta cheese. Toss gently to mix.

For the Dressing:

  1. 3. In a small jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
